vinsanto

While we were on the island of Santorini, the tall boy and I decided to go on a wine tour on our last day.  We had so much fun.  How could you not? Especially when the tour started at 11am!  There's nothing wrong with tasting wine before noon, right? ;)   Anyway, on the island of Santorini, a distinct type of grape is grown, called "assyrtiko".  The vines are made to grow into a "nest" shape because the land is so dry and the sun is so hot.  This grape variety is usually used to make white wines, and the special dessert wine known on the island, called Vinsanto.  Needless to say, we should have brought some home. Next time.  Anyway, we had a great time, and we clearly learned a lot about the whole vinification process.  I highly recommend a wine tour, should you ever end up in Santorini!
